You all know how close bread and butter pudding is to me, so turning it into an ice-cream may seem a little out of character, but not at all. When eating this ice-cream you feel you capture all of the original recipe’s flavours.

The ice-cream is finished with caramelized Melba toast, which represents the crispy glazed topping of the classic hot pudding.
