Spotted Dick – also known as Spotted Dog or Plum Bolster – is a typical example of an early roly-poly boiled pudding made with suet (the relic of the savoury). I’ve never been quite sure about the name, but always very sure about the taste. It was one of those puddings I would look forward to at school when it came to lunchtime.
