After a generous serving of the Christmas lunch starter and main course, the rich fruity pudding always ends up being just a thin slice. So what do we do with the remaining two-thirds or half of the pudding? Well, here’s the answer: turn them into crispy fritters. The cranberry ice-cream is also a great extra because it uses up the jar that wouldn’t otherwise get finished. This is a wonderful pudding made from simple Christmas leftovers. Offering hot, crispy fritters with home-made ice-crea
