This pudding idea is not a classic yet, but I hope it will become one for the future.
These pancakes contain all of the Christmassy flavours, but have a much lighter finish than a conventional pudding. They can be made a few hours in advance, while the turkey is roasting, and then re-heated in the oven, or microwaved.
The beauty of this dish is that you can eat as many or as few pancakes as you like. I suggest four to five per portion. Along with the ‘cakes’ we’ll have a van
