Cheddar is one of our most famous British cheeses, and often, particularly in the north, it is baked in pies along with apples. This recipe, however, is from the West Country, so try to use a good mature Cheddar from that region. It’s not a thick cake, more the depth of Italian focaccia bread. Once it is baked, the cheese is sprinkled on top and then the cake is returned to the oven or the cheese melted under the grill. It’s quick and easy to make and is best eaten while still warm,
