Flavoured with grated Cheddar and rolled in chopped pecan nuts, these cheese biscuits would be perfect to serve with your cheese course or to enjoy with other cheese accompaniments – grapes, apples, celery, and so on. The pecan nuts give the biscuits an added crunch.

Method

Pre-heat the oven to 180°C/350°F/Gas Mark 4.

Cream together the Cheddar cheese and butter. Add the cayenne pepper and flour, mixing to a firm dough. The mix can now be rolled into a log, approximately 5 cm (2 in) in diameter and rolled to coat in the chopped pecan nuts. Refrige
