Again, a very British cheese mixed with sesame seeds to make a pungent cheese biscuit for a savoury snack or to accompany a cheeseboard. Almost any other cheese can be grated and used to flavour the biscuit.

Ingredients

  • 100 g (4 oz) plain flour

Method

Pre-heat the oven to 180°C/350°F/Gas Mark 4.

Rub the flour, butter and cayenne together.

Add the grated Stilton cheese and mix to a firm dough. Roll into a log, approximately 5 cm (2 in) in diameter, and then roll in the sesame seeds. Refrigerate to firm the log.
