Sandwich RollsEasy

Rolls were used to contain sandwich fillings from quite early times – bridge rolls were actually ‘invented’ for bridge players who, like the Earl of Sandwich, couldn’t bear to leave the table. The rolls here, however, are pieces of bread rolled up around a spicy filling of smoked salmon and horseradish.
To make the bread even thinner, roll each slice with a rolling pin. Now cut the crusts off. Add the horseradish cream to the mayonnaise and spread onto each slice, not quite to the edge for a neater finish. Place a slice of smoked salmon on top of each and then roll as for a mini swiss roll. These can now be served as they are or sliced into 1 cm (½ in) ‘Catherine wheel’ pieces.
