Relishes are really quick pickles, and are great with all kinds of meat. This tomato relish suits lamb in particular. Serve it with roast lamb instead of redcurrant jelly or mint sauce. It also eats well with Shepherd’s Pie Fritters.

For a tomato relish with the flavour of apples working behind it, simply omit the mint. This now becomes a great favourite for roast pork.
