Name: Chocolate Chocolate Cocoa Cookies
Yield: Makes 2½ to 3 dozen.
Ingredients: ½ cup firmly packed light brown sugar; 1½ tbsp. unsweetened cocoa powder, sifted; ½ cup unbleached, all-purpose flour; 2 tsp. pure vanilla extract; 2 oz. bittersweet chocolate, coarsely chopped; ¼ tsp. salt; ½ tsp. baking powder; 1 cup granulated sugar; 4 large eggs, lightly beaten; ½ cup unsalted butter, softened to room temperature; 4 oz. unsweetened chocolate, coarsely chopped; 6 oz. semisweet chocolate, coarsely chopped

Here is another variation on the cookie/brownie theme, this one with an intense cocoa and chocolate flavor.

Ingredients

Brownie Base

4 oz. unsweetened chocolate, coarsely chopped
6 oz. semisweet chocolate, coarsely chopped

Method

Heat oven to 350 degrees. Line 2 or 3 cookie sheets with parchment paper.

For the Brownie Base

Combine the unsweetened and semisweet chocolates in a double boiler set over simmering water. Stir often, over low heat, until mixture is melted and smooth.
