In my Mint Chocolate Brownie in the Round recipe, I mention pairing the slices with quality mint ice cream. Here’s a quick, easy, and flavorful alternative when quality can only be found in your kitchen!

Ingredients

Ice Cream Base

  • 1 half-gal. vanilla ice cream, softened slightly
  • 1 cup finely crushed hard peppermint candies

Method

For the Ice Cream Base

In a large bowl with an electric mixer, beat the ingredients until well combined.

Cover and freeze until firm enough to scoop, at least 2 hours.
