This is the only side dish at B-Side BBQ that isn’t vegetarian. To make up for that, I’ve included almost every part of the pig here except for the oink. I’ve made a meatless version, but frankly it’s not the same. Of course, you can omit anything you don’t care for and it will still taste great. This is one of several sides that could work as a meal. Slow cooking is the key to deep flavor.
