In an electric spice or coffee grinder or with a mortar and pestle, grind or crush the allspice, cumin, peppercorns, cardamom, cayenne, cinnamon, cloves, coriander seeds, ginger, mace, nutmeg, turmeric, thyme, and bay leaf. (To make ahead, store in an airtight container for up to 1 month.)
