Some customers laugh when they see this tofu on the menu, as if to question why anyone other than a strict vegetarian would choose it over ribs. Well, one bite and they reconsider. At B-Side, we’re fortunate to be able to source our tofu from Hodo Soy Beanery, a producer based here in Oakland, which makes a meaty, organic tofu that really takes on the flavor of the sauce.
