Method

In a small heavy-bottomed saucepan, combine the water and sugar. Split the vanilla bean lengthwise, scrape the seeds into the pan, and then add the pod. Bring to a boil and cook, stirring occasionally, until the sugar has completely dissolved, about 2 minutes. Let cool completely and remove and discard pod before using, about 2 hours.
