Crack the eggs into a large mixing bowl and whisk briefly. Add 2 tablespoons of the sugar, the double cream, milk and 1 teaspoon of the vanilla and whisk again for 2–3 minutes until all the ingredients are completely incorporated.
In a bowl, gently fold the remaining 1 teaspoon vanilla extract with the crème fraîche – don’t over mix as you want the crème fraîche to be nice and thick. Ke
