There’s quite a lot of time and effort that goes into this dish but it’s well worth every second. Pulled pork and waffles is a big hitter amongst brunch lovers, and replacing the muffin – traditionally used in a benedict – with a waffle was a game changer for us, as is the yuzu hollandaise, which cuts through the salty pork. If you have an early breakfast, the pork can be cooked the day before and reheated, covered with foil, in the oven.
