A large flat top grill in a professional kitchen is perfect for cooking lots of pancakes at the same time. We don’t have this luxury at home, so we use two large non-stick frying pans instead. Alternatively, cook the pancakes in batches and keep them warm in the oven whilst you make more. In the summer months, fresh berries make a delicious alternative to the compote.
