For the pancakes, place the potatoes in a pan of water and bring it to the boil. Cook for 15–20 minutes, or until tender. Drain well and allow to cool slightly in the colander before transferring to a bowl and mashing roughly with a fork. Don’t worry about a few lumps – they add texture (which is good). You should have around 250g (9oz) of mashed potato.
