It’s very important to use a large deep pot when making honeycomb as once the bicarbonate of soda is added it will expand and foam very quickly. The last thing you want is for it to overflow from the pot as its extremely hot and is a real pain to clean as it sets instantly once its hits a cooler service. Make sure the tray you pour it into is deep as it will continue to bubble and grow. It’s best to have everything set and ready and take care when making honeycomb.
