  • 1.5 kg (3 lb 6 oz) chilled seedless watermelon, skin removed and diced

Method

Put all the ingredients in a food processor and blend for 2–3 minutes until all the watermelon is broken down.

Strain through a fine strainer into a jug and stir again. Taste the drink for sweetness – you can add a touch more honey if it’s too sour, but be careful not to over-sweeten as this drink should be sharp and fresh.

Refrigerate for 1 hour, then serve in glasses over ice.
