This refreshing and fruity summer soda is a great way to use up the whey produced when making labneh. It cleverly uses fermentation to give the drink a natural fizz which both children and adults will love.
In a pan, simmer the raspberries, sugar and water over a low heat for 25–30 minutes. Remove from the heat and allow to cool completely.
Once the mixture has cooled, pass it through a fine strainer lined with a muslin cloth to remove all the pulp. Discard the pulp and you should be left with a deep red juice.
