This easy one-pan dish is made with eggs, tomatoes and peppers. There are many variations but we feel it’s important to keep it simple. Roaming the bazaars of Istanbul, you’ll find shops selling tin-lined copper dishes that are just perfect for menemen. Your local Turkish shop might just have one but failing that a skillet or frying pan will work just as well.
