These offer the best value for money and many swear by their superior flavour and texture, but they do require advance soaking.
Soak the chickpeas and a pinch of bicarbonate of soda overnight in plenty of water.
The next day drain and rinse the chickpeas, transfer them to a big saucepan and fill with enough water to cover them by at least 5cm. Bring to a boil and skim off any foam or impurities. Add the garlic, onion and the olive oil and cook until the chickpeas are soft, about 45 minutes.
