Method

This is a very versatile pickling liquor with balanced salt, sugar and acidity levels that don’t overpower the delicate flavours of the vegetable. It can be used either hot or cold. As a general rule, harder vegetables such as carrots and cauliflower are hot pickled and softer ones such as cucumbers and shallots are cold pickled.
