As carrots are a harder vegetable, they are best suited to hot pickling, where the heat of the liquid softens the carrots as well as pickling them. Feel free to cut the carrots into any shape you want. We keep this fairly rustic by slicing baby Chantenay carrots into quarters lengthways.
