In Greece and Cyprus, spoon sweets have been offered as a sign of hospitality for centuries and are still as popular as ever. Apart from being sweet and delicious, spoon sweets serve a practical purpose: the art of making these little nibbles was a way to preserve fruits at their peak, and also to make certain fruits edible.
Sour citrus or bitter and tart fruits are most prized for making spoon sweets. Foraged fruits are the most rewarding to use and at certain times of the year, ev
