We can’t think of anything more delicious to load onto a piece of hot sourdough toast in the morning than this wonderful jam. Be careful not to stir too vigorously when you make this as you want to keep the small strawberries intact if possible.
Using a peeler, peel the lemons, taking care to leave the white pith, then juice them. Slice the lemon peel into long thin strips and put to one side.
Wash the strawberries, then trim and cut any large ones into quarters. Keep the small ones whole. This should give you a rather nice chunky texture.
