Metaxa is a brandy-like spirit made from Muscat and numerous botanicals from the Greek islands, including rose petals. It makes a wonderful addition to this jam as it tastes so unique. Metaxa is typically garnished with grapefruit, so this marriage of flavours is completely natural to anyone familiar with the spirit.

Ingredients

  • 3 grapefruit
  • 50 ml Metaxa
  • 1 kg jam sugar

Method

Zest the grapefruit and put the zest aside in a bowl. Place the grapefruit in a large pan with plenty of cold water and bring to a boil. Once it is boiling, drain the grapefruit and repeat with fresh cold water. This helps open the pores, release the aromas, soften the pith and remove any impurities.
