Great as a salad dressing or as a fancy garnish, this oil can elevate the simplest of dishes and is a brilliant alternative to ever-prevalent pesto.
In a deep pan, boil some water. Throw in the rocket and boil for 30 seconds, stirring, and you will see the rocket turn a vivid green. Drain the rocket in a sieve and immediately run it under cold water. Using your hands squeeze out any remaining liquid.
Place the wilted rocket into a jug blender with the garlic, olive oil and a pinch of salt and black pepper, then blitz until smooth. I
