Harissa on its own can take over a dish but diluting it into a spicy oil gives you more versatility.

3 tbsp Harissa Paste
125 ml olive oil

Method

Put the harissa paste in a small pan with the olive oil and bring to the boil. Take off the heat and allow the oil to cool ready for use. Store in a jar in the fridge.
