Chocolate has been associated with Lyon from the early seventeenth century, soon after it was brought via Spain from the New World. Since most of France’s best chestnuts come from the Ardèche region, just down the Rhone from Lyon, the two are often combined in desserts such as this ‘Pavé’, shaped like the paving stones which once lined French city streets.
