  • 800 g good quality, coarsely minced beef, chilled
  • ½ onion, finely chopped
  • ½ garlic clove

Method

  1. Place the chilled meat in a large bowl; add the onion, garlic, parsley, mustard and Worcestershire sauce.
  2. Add the egg yolk and seasoning and mix thoroughly. Leave in the refrigerator for 1 hour.
  3. Using wet hands, shape into 4 evenly sized burgers.
  4. Heat a chargrill or pan grill until smoking hot.
