- 800 g good quality, coarsely minced beef, chilled
- ½ onion, finely chopped
- ½ garlic clove
- Place the chilled meat in a large bowl; add the onion, garlic, parsley, mustard and Worcestershire sauce.
- Add the egg yolk and seasoning and mix thoroughly. Leave in the refrigerator for 1 hour.
- Using wet hands, shape into 4 evenly sized burgers.
- Heat a chargrill or pan grill until smoking hot.
- Brush the burgers with a little oil,
