  • 1 tbsp honey
  • 150 ml medium sweet Madeira wine
  • 1 tbsp

Method

  • Place the honey and Madeira in a small pan, bring to the boil.
  • Reduce the liquid down until only 2 tbsp remain.
  • Add the vinegar, then whisk in the oils to form an emulsion; season to taste.
