In the Middle Eastern countries making kibbeh is an art form that requires practice to achieve perfection. I love the smoked chilli-style humous that accompanies the dish - it really adds a great kick.

Ingredients

  • 150 g bulghur wheat
  • 1 onion, finely grated
  • 1 garlic clove, crushed

Method

  1. Place the bulghur wheat in a bowl, pour over enough boiling water to cover; leave to soak for 30 minutes, then drain off any remaining water left in the bowl. Dry the bulghur wheat in a towel.
