Some store-bought mayonnaise is fine, but nothing can compare to a home made version. Although taking a few minutes longer, making it really does pay dividends.

Ingredients

  • 3 egg yolks
  • 1 tsp Dijon mustard
  • 1 tsp white wine vine

Method

  • Place the egg yolks, mustard and vinegar in a bowl, add a little salt and pepper.
  • Place the bowl on a wet cloth on a flat surface, this will help keep the bowl steady while adding the oil.
  • Slowly, whisk in the oil, pouring it in a fine, steady stream from a jug or ladle.
  • Whisk continuously until the mayonnaise begins to thicken; by the time al
