There are as many recipes for traditional coleslaw as there are cooks who prepare it. Although coleslaw is generally made with mayonnaise, it is sometimes bound with French dressing or sour cream, which makes a welcome change.

  • 300 g white cabbage
  • 150 g carrots, peeled

Method

  • Remove the outer leaves from the cabbage, cut it into 5cm wedges, remove and discard centre core.
  • Using a sharp knife, finely shred it into strips or use the shredding attachment of a food processor.
  • Place the shredded cabbage in cold iced water for 30 minutes.
