Ambrosial Chicken Broth with Shallots and Lime Juice

I came across this soup for the first time in Mrauk U, a basic chicken broth that’s transformed by the addition of fresh shallots and lime juice. If you have chicken broth on hand, the soup is ready in less than 15 minutes. The shallots, which are first soaked in water to remove their sharp edge and then simmered briefly, give the broth texture and a slightly sweet, fresh note.


  • 6 cups Basic Chicken Broth or store-bought chicken broth
  • 1 cup thinly sliced shallots, soaked in cold water for 10 minutes and drained
  • About ¼ cup fresh lime juice
  • Salt
  • ¼ cup minced coriander (optional)


Heat the broth to nearly boiling in a saucepan. Add the shallots and simmer for 2 to 3 minutes. Remove from the heat and stir in the lime juice. If your broth is not seasoned, you will want to add about 2 teaspoons salt; add salt gradually and taste as you go.

Serve hot, sprinkled with the coriander, if you wish.
