I came across this soup for the first time in Mrauk U, a basic chicken broth that’s transformed by the addition of fresh shallots and lime juice. If you have chicken broth on hand, the soup is ready in less than 15 minutes. The shallots, which are first soaked in water to remove their sharp edge and then simmered briefly, give the broth texture and a slightly sweet, fresh note.
