Method

This take on shallot chutney is a little more like a salad. Make the chutney and just before you taste for seasoning, add 1 to 1½ cups finely chopped English cucumber and 2 to 3 tablespoons chopped coriander (leave the skin on the cucumber if you wish for a little more color). Toss to mix well and p
