In this first cousin to the Mon recipe opposite, the shallots are soaked briefly in water to soften their edge, then tossed with fresh chiles. This hot fresh chutney is a welcome side condiment with any meal, but especially if you are serving a rich meat curry. Notice there is no shrimp paste or dried shrimp here, just fresh tastes and textures.
