  • 2 tomatoes, deseeded
  • 1 red onion
  • 2 cloves of garlic
  • 1 fresh chilli, deseeded
  • pinch of salt
  • juice of one lime
  • fresh coriander
  • 3-4 tblspns olive oil
  • 1 avocado


CHOP THE TOMATOES into small dice. Finely chop the onion, garlic and chilli and combine all the ingredients except the avocado in a bowl. A short time before serving, chop all the avocado flesh into dice similar to the tomato, and stir into the salsa.
