Tomato and fresh mozzarella salad

Method

This is a classic. Go the whole hog and search out some fresh buffalo milk cheese; the cow’s milk version has the texture but little flavour. Two whole fresh mozzarella cheeses, about 300-400 g, will be enough for four, and could easily stretch to six or eight. Simply slice the mozzarella into as many pieces as you have hungry mouths and put one piece with each salad.
