This is a really popular Middle Eastern sandwich. I was watching Somebody Feed Phil, a food and travel documentary series on TV, and when Phil Rosenthal was given a sabich he said it was probably the best vegetarian sandwich he’d ever eaten. I went into work the next day and made one, and they’ve flown off the counter ever since. It works well in any kind of pitta or flatbread, or as a wrap.

There’s a lot in this sandwich – it’s not a quick snack. Alternative
