This makes me think of Hungary. It’s cheaper than a flight to Budapest and you’re almost certain to have the ingredients in your fridge at any given moment.

Ingredients

  • 2 small red peppers, roughly chopped
  • 6 medium carrots, roughly chopped
  • 2 sprigs thyme

Method

Preheat the oven to 200°C (180°C fan).

Put the peppers and carrots on a large baking tray (you may need a couple). Sprinkle with the thyme leaves and drizzle with a tablespoon of the oil, using your hands to make sure all the vegetables are coated. Then
