Ingredients

  • 2 tbsp olive oil
  • 2 garlic cloves, finely chopped
  • 1 onion, finely chopped

Method

Heat the oil in your soup pot and gently fry the garlic and onion until soft and transparent. Stir in the courgette and cook for a further 5 minutes, then add the potatoes and stock and simmer for about 20 minutes until everything is tender. Put in the spinach and simmer again until it’s fully wilted. Season to taste with salt and freshly ground black pepper and stir in the grated Parmesan. Sca
