Aubergine Fritters with Hot Honey

This is a fab wee starter for a dinner, or it can be served as part of a mezze or as a drinks snack. It’s so quick and easy to rustle up. I first experienced a version of this in a little deli in Barcelona. It was the end of a very long and indulgent day of snacking. My partner was done as I’d dragged him around so many of the must-visit spots on my list; he fell asleep at the table while I enjoyed a glass of fine cava and a plate of Manchego. Then the lovely server brought me a wee plate o
