This salad is brilliant. It looks beautiful, it’s easy to make, it’s really good for you and it’s super tasty. I could keep adding ingredients to this but the simplicity is what I like about it. I love it on its own, but it also makes a good stuffing for peppers or tomatoes and is great with a roast. If you’re feeding a crowd, just double everything up. This is my vegan version but you could crumble through 125g of feta at the end, which adds a pleasing saltiness.
