This is so easy to throw together. If you don’t have time to roast a pepper, just use some jarred ones instead.

Ingredients

  • 1 red pepper
  • 1 small red onion, thinly sliced
  • 5 tbsp white wine vinegar

Method

First roast the pepper: either put it in a hot oven until the skin is charred all over (about 45 minutes) or place under a hot grill and keep turning as the uppermost sides blacken (which is quicker, but takes a bit more effort).
