This is Middle Eastern in influence and flavour: sweet, slightly sour and fragrant. I like this as it is, but you could also put a pinch of powdered cinnamon in the dressing, or add a handful of roughly chopped coriander. Sometimes I throw a handful of sultanas in the dressing and leave them to plump for 30 minutes or so before mixing it all in with the carrots.
