We can never keep up with demand for these. The key here is to really caramelise your veg at the beginning to get some nice rich flavours in there. These can be made in advance and frozen raw, but thaw them before baking. Pretty much all commercial puff pastry is vegan.

Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, finely diced
  • 2 large carrots, peeled and finel

Method

Preheat the oven to 200°C (180°C fan).

Heat the oil in a large heavy-bottomed pan, add the onions, carrots and turnips or swede and sweat for 10 to 15 minutes over a medium-high heat. Add a splash of water, then cover with a lid and turn down the heat a bit. Cook
